Pasteurization could bind the Calcium making it unabsorbable to our bodies and possibly toughen the Protein in cow's milk making it harder to digest. That's the principle behind fresh, raw milk. If conditions are right, and nobody industrially sabotages you, your cows should always be clean and healthy and your product uncontaminated. We aren't living in a Third World country! Cows are probably vaccinated against Burcellosis these days, independent farmers included, so that shouldn't be a problem. If someone wants to take precautions and lightly heat the milk when they get it home, that's their prerogative--in a free society, right? Without Government interference?
